The only time you should be concerned about the ports is if you changed something in the torrent client, internet security protocols, or the firewall.

Clients like uTorrent usually have a test to not only test your internet speed, but to test if your ports are properly configured as well.

Usually when a fresh torrent starts, it may take up to several minutes to fully establish it's connection.

Download times may vary, as the other seeders must balance their upload to the other leechers as well.
This process is automatic and based on the seeders settings for their torrent client.

The only way to speed things up is to either look for the product on forums that use Direct Download Links (RS, MU, NL, etc) or try to find the source material at your local video store and/or public library.

I would suggest using the .mp4 container and convert the audio to AAC. Quality=0.90. or 1.00.
Converting from 5.1 to stereo is up to you. Either way, it'll be downmixed accordingly during playback.
Avoid the audio's 'normalization' filter as that could greatly alter the playback experience. i find it often ruins the mood setting with fluctuations.

Handbreak is a good program. I believe with that one you can set it to a certain filesize: 700mb.
