Greek Shrimp (http://www.epicurious.com/recipes/food/views/Greek-Spiced-Baked-Shrimp-350590)

1 medium onion, chopped
2 garlic cloves, minced
3 tablespoon extra-virgin olive oil
1/2 teaspoon hot red-pepper flakes
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice (had to make my own: equal parts cinnamon, nutmeg, cloves)
2 14.5 oz. cans whole tomatoes in juice
Pinch of sugar
1 pound large peeled and deveined shrimp
2/3 c feta, crumbled
2 tablespoons chopped dill

- Preheat oven to 375�F with rack in middle.

- Cook onion and garlic in oil with 1/4 teaspoon salt in a 4-quart heavy saucepan over medium heat until softened, about 5 minutes. Stir in spices and cook, stirring, 30 seconds. Add chopped tomatoes with juice and sugar and simmer, uncovered, stirring occasionally, until slightly thickened, about 20 minutes. Remove from heat.

- Season shrimp with 1/8 teaspoon salt, then stir into tomato sauce. Transfer to a 2-quart shallow baking dish and top with feta. Bake until just cooked through, 18 to 20 minutes. Serve sprinkled with dill.



Good, but I recommend doubling the spices. Makes your house smell wonderful.

I'm going to make stuffed bell peppers tonight for dinner. Usually I make it with ground meat and rice, but tonight I will try it with mushrooms and rice instead!

To make 4 peppers you'll need:

4 bell peppers (evenly shaped-medium sized ones are nice)
About 500g (i make a little less) ground meat of your choice
1 cup of rice
diced Onion (as much or little as you want)
minced garlic
red sauce (it can be jarred, canned, homemade, whatever)
Salt, Pepper, any kind of spices you like
cheese you like

Cook your rice according to packaging (I use a rice cooker..). While the rice is cooking, sautee onion with the garlic until translucent. Try adding the garlic a little later so that it doesn't burn! Add the ground meat until browned. Drain off grease.

When rice is finished cooking, combine the rice and meat mixture together in a bowl. Season to taste.

Cut the tops off your peppers and clean the seeds out, rinse well. use a spoon or something to stuff the peppers with the meat/rice confetti, yum! Make sure you spread out the mixture evenly between the 4 peppers.

Get a pot that will snugly fit the peppers (you don't want them to fall over). Put a layer of sauce on the bottom of the pot. Place peppers snugly into the pot. Top the peppers with a slice of cheese, if you like. pour the rest of the sauce over the peppers, covering nicely.

Then put heat on medium-low with a lid and cook them for about 45mins or until the peppers are easy to pierce with a fork. Occasionally ladle the sauce over the peppers as they cook, to keep them moist.

Serve once they've cooled a little. Grated hard cheeses like parm or asiago go really well with this and srsly the leftovers are even better the next day. love love love stuffed peppers.

You could do this in a crockpot or in the oven, but i find stovetop to be the quickest.

As for tonight, I've made a homemade chicken pot pie from scratch. I've never really been all that successful with pastries but so far it looks like it's going to be good.

All the usual suspects have been tossed in. Carrots, potatoes, peas, peas, rosemary, thyme and lots of coarse ground pepper.

Overcast rainy day calls for such a meal.

YEAH EPIC DINNERS FTW :D I don't usually drink tea (iced tea occasionally) but I hope that doesn't get any worse Misu :O That doesn't sound good! Sorry to hear that :(

I used two packs of beef tenderloin, one tablespoon of chopped thyme leaves (I always use those but this time less) and one tablespoon of basil leaves, a thin layer of salt that I mixed in, as well as some ground black pepper. I like portabella mushrooms so I layered a few of those in there (those make anything taste all that much better), and about half a cup of sour cream. I cooked some elbow pasta (two whole boxes :O) and mixed it all in, and lo and behold, everybody seemed to like it! Last time I added too much salt or something but tonight I was right on the money ^^

pancakes!

Pancake mix:
4 cups all-purpose flour
3 tablespoons baking powder
2 teaspoons baking soda
1 teaspoon salt
2 tablespoons plus 2 teaspoons sugar
Pancake batter:
1 egg
1 cup milk
1 tablespoon melted butter

For the pancake mix:
Directions
Mix the above ingredients together and store in a jar.

For the pancake batter:
For each 1 cup pancake mix, add 1 egg, 1 cup milk, and 1 tablespoon melted butter. Do not overmix.

Heat a flat griddle or pan over medium-high heat.

Spoon drops of 1 1/2 to 2 tablespoons of batter onto the hot griddle and when bubbles appear on the surface of the little pancakes, flip them over to make them golden brown on both sides. A minute or so a side should do it.

I am gonna take the lleft over steak, cut it into strips. Grill some yellow and red peppers, a little sweet onion. Throw it into an instant rice mix with cheese, and wrap it all into home made tortillas. For tomorrow's lunch and dinner. :D

4 oz macaroni noodles
1 oz butter
A splash of milk
A handful or two of your favorite fine shredded cheese


Boil your noodles. Drain noodles. Turn down the heat and put the butter in pot to melt it down. Put the noodles back in the pot and mix them up. In the bowl you're going to eat from, put in a small splash of milk. Then take your buttered noodles and put them in the bowl and place cheese on top directly after.

Last night I made David Chang's Ginger Scallion Noodles (http://www.time.com/time/specials/packages/article/0,28804,1985677_1985674_1985659,00.html)

Ginger Scallion Sauce
Makes about 3 cups

�2� cups thinly sliced scallions (greens and whites; from 1 to 2 large bunches)
�� cup finely minced peeled fresh ginger
�1/4 cup grapeseed or other neutral oil
�1� teaspoons usukuchi (light soy sauce)
�3/4 teaspoon sherry vinegar
�3/4 teaspoon kosher salt, or more to taste

Mix together the scallions, ginger, oil, soy, vinegar, and salt in a bowl. Taste and check for salt, adding more if needed. Though it's best after 15 or 20 minutes of sitting, ginger scallion sauce is good from the minute it's stirred together up to a day or two in the fridge. Use as directed, or apply as needed.

- We skipped the scallions, used one of those tubes of ginger you can get at any grocery store, used olive oil and regular soy sauce and red wine vinegar, and we added shrimp. And it was still good. Couldn't have been easier, too.

Tonight I'm making Pan Seared, Oven Roasted Steak with Flavored Butter (http://www.theheartofnewengland.com/food/meat/steak-roasted.html)

For two servings:

1 16 ounce or 2 8 ounce rib eye steaks at room temperature
3 tablespoons butter or butter substitute
3 teaspoons finely chopped shallot or garlic
2 teaspoons finely chopped parsley
Sea or kosher salt and ground black pepper
Cannola or grape seed oil

Preheat oven to 475 degrees. Mix the finely chopped parsley with the shallot or
garlic. Sprinkle lightly with salt and press with the flat side of a chef�s knife to
mash slightly; mix with softened butter or butter substitute. Melt the butter
mixture over low heat in a small saut� pan.

Season both sides of the steak with salt and pepper and place a heavy saut� pan
or iron skillet over high heat, filming the bottom with oil when hot. Sear the
steak until browned on one side (4 � 6 minutes). Turn the steak and brush the
top generously with the flavored butter. Place into the heated oven and cook
until done to your preference (check after 4 � 5 minutes by cutting into the
center of one of the steaks). Remember that the meat will continue to cook from
residual heat, so remove it from the oven when slightly less done than you
wish. Pour remaining butter and any pan juices over the meat and let it stand
for several minutes before serving. Serve as individual steaks or slice just
before serving on warmed plates.

- Author's comment: Master this technique, and you will be serving steaks like those in Paris Bistros. Really good steak needs only potatoes, roasted or fried and your choice of vegetables along with salad and a dry red wine for a classic meal which belongs in any serious cook�s repertoire.

Diced potatoes, sausages, bits of bacon, red, yellow peppers, green onions, mushrooms, scrambled eggs and 3-cheese mix, seasoned as spicy as I could get it without sacrificing taste. :D
