Saiyuki is about 4 men Sanzo, Hakkai, Goku and Gojyo going west to find out why all the youkai (demons) have become effected by a strange power and are violent. Except for Sanzo, they all have Youkai blood themselves so it seems that they are not effected by this wave because of devices they wear.
It's a really cool series.

There's also one about the journeys before the manga and the group that Goku travelled with before. Hope that helped. I prefer the manga, because they mess up the colouring of Sanzo's hair and I'm a rabid fan of the manga!

Well , Naruto was really Great until the time the filler episodes started...I hate them...The manga is continuing from before the fillers and is awesome...

For humour, definitely Excel Saga. That series was just waaay too funny ('specially the last episode. xD)
For serious...it's a close-call between Fate/ Stay Night and Shingetsutan Tsukihime *Type-Moon fangirlness*. Both were so good. And both made me cry. xP

I'd rec the manga right now, since the anime only just recently began airing in Japan.

I haven't really watched as much as you guys probably have, but...
Here are some of my favorites--

Ah! My Goddess! (The only manga I collect, too...>> it was my first)
Kodocha ("Will make you laugh and cry"...literally...during some episodes, I did both, like, within seconds.... It's 'hyper' incarnate)
Azumanga Daioh (I love its humor...XD)
Fruits Basket (it's so......refreshing)

Love Hina (I thought it was funny...=] I've heard the manga was better though XP)
Neon Genesis Evangelion (It's...a bit on the "heavy" side for me....I couldn't stop thinking about it for a week....)
Grenadier (I just ended up watching this sometime...>>)
Fullmetal Alchemist (I'm still not done yet...I like its humor, and it has beautiful messages, but there's something that doesn't fit with me, either....)
Cowboy Bebop (Still in the middle of watching it...beautiful script-writing, though. It wasn't what I thought it would be when I first watched it XD)
Chrono Crusade (I'm near the end....I like the main character! It's starting to get so depressing now, though...)
Naruto (It's rather nice. =] Some of the characters are very loveable, and the struggles are very real...)
Bleach (Some of the later fight scenes are so hard to stop watching....I hate episode 60, though. I want to strangle him...)

I have 2 favorite Mangas/Animes. Naruto and Berserk.
Those of you who have not read or even heard of Berserk, I highly recommend it. The storyline is incredible, the illustrations are the best I have ever seen in ANY book. The anime is also very good. However, Berserk is a very dark manga. It is definantly the most graphic manga I have ever read. I would not recommend it for those who are faint of heart. Here is some of the artwork and illustrations from Berserk.

Hmmm...Fruits Basket, obviously. I saw some Full Metal Alchemist. I've got a picture of one of the characters in my room. But the picture of the guy running away from what looks like Armageddon is kinda scary. Looking at the picture, it seems as though the flames will encompass my room. Therefore I don't look at the picture very much and instead post alot of other pictures to look at like Neon Genesis______...really long name. = P
