From what I understand, they turn you invisible, meaning you can sneak past enemies, assuming gambits are turned off or you don’t have attacking gambits.
Btw, you can read the description of the effect in the "status" menu when you’ve casted it on a member.

Vanish is a spell that originated in Final Fantasy VI. Vanish is normally a spell you use on your own party, but there was a trick involved with it in that game — Vanish followed by an instant-kill spell worked nicely on most tough enemies and many bosses. I doubt that trick works in this game, but you know, I haven’t tried it yet.
I didn’t really start using Vanish in this game until I got Vanishga. Now, I wonder I waited so long. Useful spell, definitely. It doesn’t quite work like Olde said, but he’s close. I’ve noticed that enemies can and will still target and attack your characters, even if you have this on, but all Gambits off. However, there is a much less chance of them noticing you and a good chance that their attacks will miss. Oh — and I believe that like in FFVI — having any magic cast on your characters (beneficial or harmful) will remove this spell.

Vanish, as from FF6, increases your character’s ability to dodge physical attacks, but makes them more veunerable to magic. Be careful using this around magic-using enemies.

Yep. To summarize — basically you wanna use this when you’re around a lot of enemies that are trying to pummel you with physical attacks but aren’t really using magic. And if you could Blind them first, that would make it even better.
