After most small fights, I receive different stones, skins, pelts, scales, and things of the sort. My question is, should I just sell these, or are they useful at some point in the game? Should I save them?

Well it depends. If they are items you find constantly, you can freely sell them so you can afford to upgrade your equipment and buy Magick/Technicks/etc.
But if you only have a few of these items, chances are they are more rare. You should definatly hang on to those kind of items.

The vast majority you should sell. If it’s a common drop, from a common enemy, sell it.
Actually, there are quite a few rare items you might as well sell. The Halcycons, for example, are only used for one item, so there’s no point in hanging onto them.

I collected 99 Bone Fragements from the mines sold them for a pretty penny thats for sure.

One of the most confusing aspects of Final Fantasy XII was the loot. Sell it, or hang on to it? As it turns out, the answer that has been provided here is generally correct. While you want to hang on to certain rare pieces of Loot, generally, you’ll want to sell most of it. It’s by far the best way to gain gil in this game.
