The only reason that damn quote stuck in my mind is because I had to sit through that cutscene a thousand times because I kept losing that fight. Dx Damn you, Final Fantasy, and your anti-skipness!
That said, I actually have yet to find an evil quote that I truly find evil, in Final Fantasy or otherwise. It’s like villains just try too hard to sound evil and wind up sounding comical to me.

Firstly, Bahamut during the first Chains of Promathia cutscene:

And Spotter, during the Rank 2 boss battle: "You don’t even realise what is playing out in front of your own eyes! But it is of no matter, because it is the last thing you will ever see!!"
And a little later:
"Well, it seems the two have run off. That makes no difference, as new prey awaits! Wyrm of Darkness, unleash your fury on those in your presence!"
And, after defeating him and his Dragon underling:
"Enjoy… your lives.. while .. they last.. foolish weaklings!! Ahaha hahahaaa!!"
