I haven't watched a lot of Korean films but from the list Sympathy for Lady Vengeance would be my favourite so far.
Park Chan-wook is a great director. :D
Also, I think Kim Ji-woon is very good.
He's made films in a number of different genres and brings a unique perspective to each one.

I don't think I've ever watched a Korean movie until this weekend. I was bored so I go on Hulu and search around, and I find "A Man From Nowhere," and I loved it. I would give it a 9/10. I'm thinking about watching "Mother" sometime as well.
"My Sassy Girl" really made me laugh, and not the rubbish American remake - tsk... I don't normally like romantic comedies, but there is just minimal slush in My Sassy Girl that makes it bearable!
