Gabriel Knight 3 was a great game with some great piano based music, but I haven't been overly happy with the "soundtracks" from this game I've stumbled over so far. Fortunately it's a fairly easy game to extract files from yourself, using the GK3 Barn Browser (http://gk3tools.sourceforge.net/browser.php).
Using this I've extracted what I hope is all the music files from the game. Then I played around with CDex to see if I could turn these wav files into mp3 files. Normal conversion didn't seem to work, but when I tried "strip the WAV-RIFF header(s) from MP2 or MP3 file(s)" it worked like a charm. I'm guessing this means the files were really mp3 files all along... ? The files remained exactly the same size too, and the sound quality seemed to be the same. Here is the result:

The extracted tracks all have their original names; I haven't renamed them or ordered them in any fashion. I fear that I might have mixed in a couple of sound effects or ambient files into the mix, though...
If I missed any tracks, please let me know. If you have the game, it's easy enough to use the browser I linked to above, so you can explore the game's files for yourself. Try to see if you can find the audio file of, ahem, one of the game's characters visiting the toilet.
There are also a handful of tracks here I can't remember having ever been used in the game, and I'm guessing they've been included either as Easter Eggs, or because they might have been used in some earlier version of the game and they forgot/didn't bother to remove them. If anyone knows anything about this, I'd be eager to hear. There's BARDISCO, CIRCUS1, CIRCUS2, PARADE, TE6DEMON, and maybe some others.
