Whats everyones favourite OST which uses orchestra? It can include Opening themes or Movie Scene music in games, doesn't have to be whole orchestral game Ost.
My favourite is Dragon Quest 1 to 7 OSTS

Even though theese aren't OST's, the five Orchestral Game Concert CDs from 1991 ~ 1996, without a doubt. If you're into orchestral video game music, theese are the albums for you. Fantastically orchestrations of the greatest video game classics such as Dragon Quest, Final Fantasy, Super Mario Bros., The Legend of Zelda, Lennus, Nobunaga's Ambition, Albert Odyssey, Wizardry and more from the biggest video game composer there is, such as Koichi Sugiyama, Nobuo Uematsu, Koji Kondo, Yoko Kanno, Kouhei Tanaka, Naoki Kodaka and Kentarou Haneda.
Fantatsical achievment. Check them out, please. Every theme is worth a listen.

Hikari KINGDOM Orchestral Version, Passion KINGDOM Orchestral Version, March Caprice for Piano and Orchestra, and Fantasia all Marcia for Piano, Chorus and Orchestra are all (ingenious) orchestrated pieces from the Kingdom Hearts series of games. Check it out, please.
Phantasmagorious is just a word I used to describe how good the pices are. Not sure if it's actually a word, though... but you know.

Also, the Melee soundtrack is different than Smashing... Live!

Outcast is amazing, indeed. If you liked it, check out MediEvil: Resurrection and Primal, as well. Both fully orchestrated soundtracks, enjoyable listen. Other fully orchestrated soundtracks include the Medal of Honor series. Giacchino's music is marvelous.

Shadow of the Colossus is my current favorite orchestral type OST. I wouldn't say it's the best ever. But it's definitely in the top 20 somewhere, in my humble opinion. I can listen to almost every single track all the way thru.
Soul Calibur is great too.

i'm still impressed by the first tomb raider.
even though some of the tracks were short, the music captures the moment very well.
shame most of these guys don't do solo work... :(

Not sure if this falls under the category, but the Mario & Zelda Big Band Live CD is still the best thing I've ever heard to date... The amazing improvisations are what had me hooked from the start.

Headhunter is pretty good stuff, the first time I listened to it I didn't start really enjoying it until nearly the end of the CD. Since then I have been listening to it over and over as I drive around, though the action tracks probably make me speed a little bit. Basically, the main theme (Jack's theme) is stronger than you'd think, and comes back throughout.
The music seems like it was made for some crazy action movie, but when I finally got to the game a little less than a week ago I found it really didn't live up to the music. Plus I didn't think it was very well used in-game. I would love to see more mostly-live-orchestrated compositions like that from Richard Jacques, but it comes down to budget, and Headhunter was made during a time where Sega was throwing money around more than they should have. Hopefully on Eight Days he'll have the budget again.

Dragon Quest VIII OST, Shadow Of the Colossus OST and Okami OST : these are my top 3 favourite compilations. Of course the great Final Fantasy OSTs are great, but I don't enjoy every track in the listing compared to the first three mentioned.

As well as many that have already been mentioned, the Fire Emblem series has great music, not all of it is live orchestra but some were. Also there is an orchestra at the University of Maryland that just plays videogame music; even if it was not actually meant for orchestra they arrange it so it is for orchestra, if you want to see more their site is www.umgso.com

The Knights of the Old Republic OST was very good and was performed by Jeremy Soule, who in my opinion can be ranked right up there with Hitoshi Sakimoto who composed Final Fantasy XII, also another OST masterpiece :D

Assuming Myst counts, the Myst III and IV soundtracks by Jack Wall are by far the best orchestral soundtracks I've heard. There is so much about the music that is just perfect, but I'll spare you all the gushing and just recommend them.
