I know FFXII is for PS2, but will there be a noticable difference in shading and anti-aliasing when upscaled onto a PS3?

When the PlayStation 3 is launched, backwards compatibility is handled by an actual PS2 'chip' similar to what is in the current Slimline PS2s. As this is straight hardware emulation, there won't be any improvement in graphics; you may, however, notice a difference in things such as load times due to more efficient data transfer.

PS3 doesn't upconvert lower resolutions (not even movie DVDs), so there shouldn't be any difference, except as Raidenex said, in loading times.

If it did make graphics a little sharper.. that'd be sweet, but i don't know if I can handle seeing Fran's ass in high def. My pants would just always be wet with glee!

it dose'nt really have a diffrence that i have been able to tell, but it's still the same graphics as on the PS2.

There were some options on the ps2 when playing psone games and that was hardware based.
So it's possible that there might be something.
