I like the list thus far, but you must add in Seifer, for his sheer drive to be better than everyone else, Amarant, for his massive frame and red hair, and the final boss of FFVIII, Ultimecia, because her revealing outfit would distract the other team...

Cait Sith should be an offensive lineman. I mean, he's like twice the size of everyone else.

The running back and receivers should all be thieves from FFI, because they specialize in running away.

Anyhow:

Strikers: Rikku & Selphie (they're both fast & accurate)
Midfield: Terra, Rinoa, Yuna, Garnet
Defence: Quistis, Tifa, Beatrix, Celes
'Keeper: Lulu (ability to randomly appear from nowhere v. good for in goal)

I dont know about who'd be on my football team. But my cheerleading team would be:
