While i liked Motoi Sakuraba’s work for Dark Souls 1 & 2, i loved much more original From Software composer team (Kota Hoshino, Tsukasa Saitoh, Yuki Ichiki, Hideyuki Eto and others)

EDIT: Wow this would make a very nice companion score to the Dante’s Inferno game score. Very similar dark choral work. Not something I would listen to all the time but still very well done.
Don’t give up! The music is so much better when you’ve fought, and eventually defeated the boss it’s associated with.
