Hum...let's see :

NES : Super Mario Bros. 3 (Hey, it IS the best-seller of all times for a reason.)

SNES : Final Fantasy VI (Yeah, I know, it's called FFIII on the system in America)

N64 : StarFox 64 (Not a huge N64 fan)

GameCube : The Legend of Zelda : The Wind Waker ( Unlike some others I just love the cel-shading. )

GameBoy : The Legend of Zelda : Link's Awakening ( A no-brainer here. )

GameBoy Advance : Mario and Luigi : Superstar Saga ( The game is just HILARIOUS ! )

Genesis : Sonic 3 and Knuckles (The Lock-on combination of Sonic the Hedgehog 3 and Sonic and Knuckles)

Dreamcast : Skies of Arcadia ( I technically only tried it and actually finished the GameCube version but it was so good that it overshadows any game I've played on the Dreamcast. )

PlayStation : Argh...tough call...But I'll go with Final Fantasy VII. ( Though many others come to mind, mostly RPGs. )

PlayStation 2 : Final Fantasy X ( By far, but that may yet change considering the PS2 hasn't outlived its lifespan. )

PC : The Lord of the Rings : The Return of the King ( I don't have many PC games which explains why this excellent multi-platform hack'n'slash makes it on top here. And it isn't a permanent one as well. Especially if you consider I plan on getting Prince of Persia : The Sands of Time on PC later this year. )

PS1: Vagrant Story
DC: Soul Calibur 1
PS2: Xenosaga: Der wille zur Macht
Genesis: Rocket Knight Adventures

Don't have these systems, so based on critics and creative ambitions:

GC: Eternal Darkness
XBox: Halo
N64: Zelda: Orinica of Time

Playstation - Metal Gear Solid & Final Fantasy VII (they tie)
N64 - Goldeneye
PS2 - GTA3, possibly. So much to choose from though.
XBox - Halo & Splinter Cell. Another good bunch of games are yet to come on XBox... it's sucked for a while.
PC - Counter-Strike 1.6 & TES3: Morrowind.
GameCube - I don't have one and have barely played one before, as it's not got many games that take my fancy... BUT, I want it for MGS: Twin Snakes. That is gonna be the highlight of the GC.
