I thought the reason was that fans complained about how TPM’s ultimate score was arranged–roughly the whole score being cut into really short cues that are all cross-faded together. I do know I just read earlier today that they did have the AotC one like prepared and created but never released it.
Hey! You aren’t absolutely asking for much! A good software to use for editing, although simple, may be "GarageBand". I don’t know many others. If you are looking for the most complete versions we have I suggest you check JediJon’s versions of all three prequel films. They are really good, especially those for "Episode I – The Phantom Menace" and "Episode III – Revenge of the Sith", although this last one would be PERFECT if it included the film versions (which are available and easily findable) of the tracks "Another Happy Landing" and "Execute Order 66". On the other hand "Star Wars: Episode I – The Phantom Menace"’s "The Phantom Edition", as he named it, is an absolute must have, even if you have "The Ultimate Edition" to the score. It very much is the complete score to the movie as composed. Last, but not least, I stand to say "Episode II – Attack of the Clones"’s "The Clones Attack Edition" is at its best of possibilities, although not on par with the other two absolutely NOT because of JediJon. You should really check out his other editions for other scores too.
