I believe that all of the actual arranged music from the show is included in the soundtracks. If you heard something this season that’s not on this soundtrack, it’s probably from a previous season’s soundtrack.
The only thing not included on the soundtracks is the music that was performed on set, off the top of my head: the music during the feast for Robert at Winterfell, Bronn’s and Thoros’s renditions of the Rains of Castamere, the Bolton bannermen singing The Bear and the Maiden Fair, and the music performed by the band during the Red Wedding.
Is "The Lannisters Send Their Regards" a version of "The Rains of Castamere"? Cuz you really need "The Rains of Castamere" in there now.

I’m not sure you’re right Suzaku, while it would seem that all the cues that were used in the show are on the soundtrack, after recently re-watching the proceeding two seasons to this, before it aired, I noticed that there is quite a few minor variations on the ‘main’ cues on the soundtrack.
I know that there’s a few variations on the Winterfell cue that were never included, and just skimming through the second season now (still have it in my blu-ray drive) another example was the scene between Cersei and Tyrion in episode seven, where Cersei begins to cry and Tyrion is lost in how he can comfort her. It’s actually quite a beautiful piece that goes for just under a minute, and was never included in any of the soundtracks.
I had forgotten until posting this, but the most recent track that wasn’t included was in this season, and was one that I actually extracted from the episode itself upon watching it. The cue played in the scene between Catelyn and Talisa in the second episode, where she speaks of her bastard son Jon, for the first time (I believe). Here’s the cue, I removed the centre channel, so there’s no dialogue, but after normalizing it, the ambience was boosted a bit, however the cue picks up a bit as it goes on. I’m fairly disappointed it wasn’t included, as it was quite substantial, coming in over just two minutes. It’s really a beautiful piece.

I often think about going through the show and collecting the un-released cues, however it wouldn’t compare to listening to the same cues included in any promo scores or recording sessions.
I’m not sure though, and you’re probably right. Even if they are cues from other pieces, it would be nice to have all the arrangements as they actually appear on the show. It would also be nice to get the pieces performed on set, isolated from the rest of the ambience in the scenes, if they were recorded seperately.
