Well, first you can check if someone else has done a game rip.
You can search using Google, paste this in bold: name site:forums.ffshrine.org (replace "name" with your game’s name).
Or more specifically for game rips: name "game rip" | "gamerip" site:forums.ffshrine.org (again, replace "name" with your game’s name).
(Here’s a tip to help you help yourself: you can add custon search engines to Chrome to search specific sites, queries, with operators. Tremendously useful, I use them all the time.)
There are some rips at KH Insider (https://www.google.com/search?q=downloads+kh+insider) and Galbadia Hotel (http://gh.ffshrine.org/soundtracks).
There are PSF rips that need to be converted (more on that if needed): PSF Mirror #1 (http://tzone.org/~llin/psf/), Zophar (http://www.zophar.net/music/psf.html), CaitSith2 (http://www.caitsith2.com/psf/).
For ripping, the best I found and use for PS1 is PSXMC (http://www.zophar.net/utilities/psxutil/psxmc.html), it’s pretty straightforward.

You should be willing to help yourself out by using Google and learning to use Google (http://www.powersearchingwithgoogle.com/course/ps/course.html). Asking is only practical if the stuff is arcane. Otherwise, the same question has most likely been asked and answered before.
AFAIR, I couldn’t rip Medievil 2. It was also composed by Paul Arnold & Andrew Barnabas so it may be a good soundtrack (I’m checking it out on Youtube right now), but I don’t remember it’s music at all, unlike Medievil 1’s, which is still one of the best and most memorable I’ve ever heard.
IMO Medievil 2 isn’t nearly as good, I have no plans for ripping it.
