Last thing I ate was some leftover cheese bread from a pizza place and some cottage cheese with a bit of salt and pepper 🙂 Oh ya, and a chocolate marshmallow easter egg candy… my fav <3

I had a pesto and cheese sandwich with sprouts for dinner. Also, I had diet coke, which I have not had in ages. Just had a random craving for it.

On the side I just had angel hair pasta with parmesan and olive oil and garlic. And a spinach salad with ginger dressing. Got lazy.

yesterday –
honey bbq chicken wings and fries from the wings place

…and the most delicious macaroni I’ve ever had in my life at a local restaurant! I usually have a very difficult time getting through a regular sized bowl there, but I got a large and shoveled right through it! I felt fat, but sooooo delicious! I even wanted more when I was done!

Let’s see… it was macaroni, with a cream sauce and shredded cheese (may have been either cheddar jack or monterey jack), I ordered sauteed beef in it too, a lot of finely crumbled bacon bits (almost bacon powder), and sausage chunks. SOOOOO GOOD!!!!!!

As for dinner, I’ll probably have some pizza margherita.

I had some alfredo for dinner. Nuthin’ special just some jarred sauce and extra grated parm on top. Mediocre at best. Oh ya, and I ate a couple of those cheese filled bread sticks I got a few days ago <3

it’s easy if you have a food processor.

take:

2 cups cooked chick peas
1/3 cup tahini
1/3 cup freshly squeezed lemon juice
1/3 cup the cooking water you used for the chick peas
8 cloves garlic cloves (mince the hell outta them)(really depends on your personal tastes for garlic.)
2 1/2 tsp ground cumin
1 1/2 tsp curry powder
1 tbsp sambal oelek
1/2 tsp salt
1/4 tsp toasted sesame oil
1/2 tsp cayenne
6 drops hot sauce of your choice

mix it all in a food processor until it’s the right consistency
then add in:

3 tbsp freshed chopped parsley
2 tbsp extra-virgin olive oil

mix for 30 seconds and it’s done. 🙂

I usually chill it before I actually serve it with crackers or warm pita flatbread.

It’s hot but not too hot….unless you’re a wuss. :p

When I was in grade school they only had chocolate once a week. Now they have chocolate and strawberry EVERYDAY. Seems like they have pizza everyday, too.

So I am having grilled cheese on rye bread with fresh basil leaves. I made my husband one with rye, basil, pizza saue, ham and onion and of course cheese. yum!

Baked n’ diced potatoes in garlic, cumin, curry and all the good stuff.

Then fried up some sausages, bacon, red n’ yellow peppers and onions.

Put it all in a casserole dish, poured beaten eggs all over and grated montery jack/jalapeno and cheddar cheese and put it in the oven at 425 for 10 minutes.

After the egg was cooked I threw on fresh diced tomatoes and chives……

…and now….nummers. 🙂

1 cake mix (chocolate for Oreo taste, but can use any flavor)
3/4 c. shortening
2 eggs

Mix all ingredients, then roll into 1" balls. Flatten balls with the bottom of a glass. Bake 8 min at 350 degrees.

Filling

3 3/4 cups powdered sugar
1/2 tablespoon granulated sugar
1/2 cup shortening
2 tablespoons hot water

They are yummy, and you can double stuff them if you want!

I have a kid and Husband with a chocolate allergy so I make them out of Lemon cake mix for them.

If the cookie dough sticks to the bottom of the glass, dust the glass with flour.

A can of tuna
2 tablespoons of mayonaise (unsure about this one)
1/2 tablespoon mustard
some ground pepper
1/2 cup shredded carrots, broccoli, and cauliflower
1/3 cup diced onions, bell peppers and tomatoes
I also added a bit of sal y lim???n
Ritz crackers

Baked shrimp in a tomato feta sauce

Ingredients

* 1 Tbsp olive oil
* 1 medium onion, chopped
* 2 cloves garlic, minced
* 2 14.5-ounce cans of diced tomatoes (or fresh, obviously)
* 1 Tbsp minced fresh dill or 1 teaspoon dried dill
* 1 to 1 1/4 pounds medium sized raw shrimp, peeled and deveined (can leave tails on), thaw if frozen
* Salt/pepper to taste
* 3 ounces feta cheese (about 2/3 cup, crumbled)

1 Preheat oven to 425???F. Heat oil in a large, oven-proof skillet on medium high heat. Add the onions and cook until softened, 3-5 minutes. Add the garlic and cook until fragrant, about 30 seconds more.

2 Add the tomatoes and bring to a simmer, reduce heat and let simmer for 5-10 minutes, until the juices thicken a bit.

3 Remove from heat. Stir in the herbs, shrimp, feta cheese, and salt and pepper to taste. Place pan in oven and bake, uncovered, until shrimp are cooked through, about 10-12 minutes.

Serve with French bread, pasta, or rice.

1/3 cup fresh lemon juice
1/3 cup Honey
1/3 cup Brandy (I prefer rum but my kids prefer brandy)
1/3 cup Camomile tea concentraited
– I boil a tea bag in 1 cup water until there is only about a third of it left
take the tea bag out and mix the honey and lemon in the pan till honey blends with everything
remove from heat and stir in the brandy

allow to cool
take a tablespoon as needed. (and that doesn’t mean take it every minute till its gone ;-D)

I used this reciepe on my son who has asthma because I didn’t like the cough syrup they gave me to give him. It made him shake like he was on too much caffine. I would give him a tablespoon about every 2 hours.

Pinch of sugar
1 pound large peeled and deveined shrimp
2/3 c feta, crumbled
2 tablespoons chopped dill

– Preheat oven to 375???F with rack in middle.

– Cook onion and garlic in oil with 1/4 teaspoon salt in a 4-quart heavy saucepan over medium heat until softened, about 5 minutes. Stir in spices and cook, stirring, 30 seconds. Add chopped tomatoes with juice and sugar and simmer, uncovered, stirring occasionally, until slightly thickened, about 20 minutes. Remove from heat.

– Season shrimp with 1/8 teaspoon salt, then stir into tomato sauce. Transfer to a 2-quart shallow baking dish and top with feta. Bake until just cooked through, 18 to 20 minutes. Serve sprinkled with dill.

Good, but I recommend doubling the spices. Makes your house smell wonderful.

Tried the Cheddar Jalapeno Cheetos.
They were ok. The jalapeno kind of overtook the cheddar part.

Strawberry shortcake for dessert.

At in some salt-less tortilla chips and a watermelon airhead and it’s good times.

Extra filling.

To make 4 peppers you’ll need:

4 bell peppers (evenly shaped-medium sized ones are nice)
About 500g (i make a little less) ground meat of your choice
1 cup of rice
diced Onion (as much or little as you want)
minced garlic
red sauce (it can be jarred, canned, homemade, whatever)
Salt, Pepper, any kind of spices you like
cheese you like

Cook your rice according to packaging (I use a rice cooker..). While the rice is cooking, sautee onion with the garlic until translucent. Try adding the garlic a little later so that it doesn’t burn! Add the ground meat until browned. Drain off grease.

When rice is finished cooking, combine the rice and meat mixture together in a bowl. Season to taste.

Cut the tops off your peppers and clean the seeds out, rinse well. use a spoon or something to stuff the peppers with the meat/rice confetti, yum! Make sure you spread out the mixture evenly between the 4 peppers.

Get a pot that will snugly fit the peppers (you don’t want them to fall over). Put a layer of sauce on the bottom of the pot. Place peppers snugly into the pot. Top the peppers with a slice of cheese, if you like. pour the rest of the sauce over the peppers, covering nicely.

Then put heat on medium-low with a lid and cook them for about 45mins or until the peppers are easy to pierce with a fork. Occasionally ladle the sauce over the peppers as they cook, to keep them moist.

Serve once they’ve cooled a little. Grated hard cheeses like parm or asiago go really well with this and srsly the leftovers are even better the next day. love love love stuffed peppers.

You could do this in a crockpot or in the oven, but i find stovetop to be the quickest.

Super yum. It’s been awhile since I’ve had stuffed peppers.

As for tonight, I’ve made a homemade chicken pot pie from scratch. I’ve never really been all that successful with pastries but so far it looks like it’s going to be good.

All the usual suspects have been tossed in. Carrots, potatoes, peas, peas, rosemary, thyme and lots of coarse ground pepper.

Overcast rainy day calls for such a meal.

I has buttery rice and mixed vegetables.

And I’ve figured out this week that sweet tea seriously effs my body. It’s so delicious and I drank a ton but my body couldn’t tell the sugar content and now it doesn’t know how to process it T____T I’m so out of it right now….

I used two packs of beef tenderloin, one tablespoon of chopped thyme leaves (I always use those but this time less) and one tablespoon of basil leaves, a thin layer of salt that I mixed in, as well as some ground black pepper. I like portabella mushrooms so I layered a few of those in there (those make anything taste all that much better), and about half a cup of sour cream. I cooked some elbow pasta (two whole boxes :O) and mixed it all in, and lo and behold, everybody seemed to like it! Last time I added too much salt or something but tonight I was right on the money ^^

Pancake mix:
4 cups all-purpose flour
3 tablespoons baking powder
2 teaspoons baking soda
1 teaspoon salt
2 tablespoons plus 2 teaspoons sugar
Pancake batter:
1 egg
1 cup milk
1 tablespoon melted butter

For the pancake mix:
Directions
Mix the above ingredients together and store in a jar.

For the pancake batter:
For each 1 cup pancake mix, add 1 egg, 1 cup milk, and 1 tablespoon melted butter. Do not overmix.

Heat a flat griddle or pan over medium-high heat.

Spoon drops of 1 1/2 to 2 tablespoons of batter onto the hot griddle and when bubbles appear on the surface of the little pancakes, flip them over to make them golden brown on both sides. A minute or so a side should do it.

I am gonna take the lleft over steak, cut it into strips. Grill some yellow and red peppers, a little sweet onion. Throw it into an instant rice mix with cheese, and wrap it all into home made tortillas. For tomorrow’s lunch and dinner. 😀

2 lump spoonfuls of peanut butter
1 cup of skim milk
2 tablespoons of Hershey’s syrup stirred in

Delicious lunch in under 10 minutes 😀

1 can chef boyardee beef ravioli
4 oz american cheese
1/2 cup grated parmesan cheese

Melt down the cheeses, mix it all up and make goop. It’ tasty.

Thurs may 12th
1pm: Turkey on wheat, (lettuce, tomato, olives, onions, mayo), orange juice.
6:30pm: chicken, broccoli, chicken rice, milk, chocolate pudding.

Fri may 13th
8:30am: rice crispies, (milk, banana), orange juice.
1:30pm: turkey on wheat, (swiss cheese, tomato, avocado, mayo), milk, chocolate pudding
7pm: turkey on wheat, (tomato, avocado, mayo, mustard), orange gatorade.

Sat may 14th
8am: banana
9:30am: 2 scrambled eggs (milk, salt, pepper), 1 waffle (butter, syrup), milk, orange juice.

4 oz macaroni noodles
1 oz butter
A splash of milk
A handful or two of your favorite fine shredded cheese

Boil your noodles. Drain noodles. Turn down the heat and put the butter in pot to melt it down. Put the noodles back in the pot and mix them up. In the bowl you’re going to eat from, put in a small splash of milk. Then take your buttered noodles and put them in the bowl and place cheese on top directly after.

Ginger Scallion Sauce
Makes about 3 cups

???2??? cups thinly sliced scallions (greens and whites; from 1 to 2 large bunches)
?????? cup finely minced peeled fresh ginger
???1/4 cup grapeseed or other neutral oil
???1??? teaspoons usukuchi (light soy sauce)
???3/4 teaspoon sherry vinegar
???3/4 teaspoon kosher salt, or more to taste

Mix together the scallions, ginger, oil, soy, vinegar, and salt in a bowl. Taste and check for salt, adding more if needed. Though it’s best after 15 or 20 minutes of sitting, ginger scallion sauce is good from the minute it’s stirred together up to a day or two in the fridge. Use as directed, or apply as needed.

– We skipped the scallions, used one of those tubes of ginger you can get at any grocery store, used olive oil and regular soy sauce and red wine vinegar, and we added shrimp. And it was still good. Couldn’t have been easier, too.

Tonight I’m making Pan Seared, Oven Roasted Steak with Flavored Butter (http://www.theheartofnewengland.com/food/meat/steak-roasted.html)

For two servings:

1 16 ounce or 2 8 ounce rib eye steaks at room temperature
3 tablespoons butter or butter substitute
3 teaspoons finely chopped shallot or garlic
2 teaspoons finely chopped parsley
Sea or kosher salt and ground black pepper
Cannola or grape seed oil

Preheat oven to 475 degrees. Mix the finely chopped parsley with the shallot or
garlic. Sprinkle lightly with salt and press with the flat side of a chef???s knife to
mash slightly; mix with softened butter or butter substitute. Melt the butter
mixture over low heat in a small saut??? pan.

Season both sides of the steak with salt and pepper and place a heavy saut??? pan
or iron skillet over high heat, filming the bottom with oil when hot. Sear the
steak until browned on one side (4 ??? 6 minutes). Turn the steak and brush the
top generously with the flavored butter. Place into the heated oven and cook
until done to your preference (check after 4 ??? 5 minutes by cutting into the
center of one of the steaks). Remember that the meat will continue to cook from
residual heat, so remove it from the oven when slightly less done than you
wish. Pour remaining butter and any pan juices over the meat and let it stand
for several minutes before serving. Serve as individual steaks or slice just
before serving on warmed plates.

– Author’s comment: Master this technique, and you will be serving steaks like those in Paris Bistros. Really good steak needs only potatoes, roasted or fried and your choice of vegetables along with salad and a dry red wine for a classic meal which belongs in any serious cook???s repertoire.

1. Assemble sandwich, bread–>cheese–>pepperoni(more cheese after if you like)–>bread
2. Melt 1 tablespoon butter in frying pan on Low heat. If its too hot the butter will just evaporate.
3. Place sandwich on top of melted butter, grill until golden brown or preferred crispiness.
4. Repeat other side

Enjoy.
Optionally use Sourdough and Cheddar with some onion, tomato and either basil or cilantro for a tasty panini.

Homemade christmas log. but a friendly advice. when you’re given the recipe for the coffee filling (and covering), double check it. it might be wrong.

in this case it was totally wrong. the thing still tastes great, but it doesn’t look as good as it should. I was mad when I realized the filling was effed up… and that I had actually been given a recipe for another type of coffee flavoured filling for an entirely different type of cake.

2 c. sugar
1/2 c. corn syrup
1/2 c. hot water
2 egg whites
2 tsp. vanilla
You may add 1/2 c. chopped walnuts or 1/4 c. candied cherries

Cook sugar, water and syrup until it forms a hard, brittle ball in cold water and makes a clean break when struck against the side of a cup. Pour syrup slowly over egg whites which have been beaten stiff. Then beat constantly. Add nuts and vanilla also fruit, if desired. Beat until creamy. With teaspoon or soup spoon, drop divinity on greased plate.
