Creation of mp3’s involve sound compression (i.e. loss of sound quality from the original source). Compression to 320 involves the least loss, with compression rates of lower numbers involving greater loss. These files are often described as lossy.

Lossless means you get the same quality as the source.

With both processes the end quality depends greatly on the quality of the original source.
