"Therion" : Best Symphonic Metal Band Ever to me. I recommend "Theli" & "Vovin" Albums from their Discography
"Haggard": Other one that deserves to be named. "And thou shalt trust…the seer" is a must have album.
"Thy Majestie": If you liked Rhapsody, you’ll definetely like Thy Majestie, they’re Symphonic & Progressive their songs. "Hastings 1066" is a great album.
For purely female vocals, not so symphonic band, but worth to listen "Edenbridge" & "After Forever".
Just to say, all of the bands that you named have Power Metal elements, since is the more easy genre to add symphonic bombastic elements.
Therion combines a lot of styles which is why I have them in my own monolith & Haggard have too much classical/medieval Music with some elements of Death Metal, Thy Majestie is power metal but without the regular drums that we listen a lot in many bands of this genre.

Bal Sagoth have a huge story entwined throughout their album. I have spoken with Lord Byron HIMSELF on this many times 😀
Sometimes the instrumental versions of these songs sounds like from certain video games I like. I can sometimes imagine Castlevania remixes as part of this genre.
dimmu borgir is more like doom/black/death, far from anything symphonic.
some likely bands would be edenbridge (heavy metal), within temptation (gothic), lunatica (symphonic) [their latest album deviates from their improved quality and totally trashes them into a poppy commercial corner,sucks,hate to c them fall], kerion (power), cloudscape (has psychedelic influence), virus iv (thrashy progressive)
I’ve heard (and love) most of these bands, but I’ll for sure check out the bands I hadn’t heard of.
I’m not a big power metal fan, but of what hasn’t been mentioned yet I’ve always enjoyed Elvenking’s album "Wyrd". (Their newer ones haven’t impressed me.)
Hollenthon’s 2008 release "Opus Magnum" got massive praise as one of the best symphonic metal albums available when it came out. It’s been sitting unlistened to in my mp3 folder for two years now and I can’t put it on where I’m at right now, but based on the people who’ve talked it up I’ll pass along the recommendation.

Dimmu Borgir have been a pretty standard black metal band for the bulk of their existence, though I can’t speak for the last two albums. Death Cult Armageddon definitely had some major symphonic elements.
