Well, I’m in conflict here ^.^ While I do like Knuckles’s theme better overall as a VGM tune (and my #1 favorite), as a character theme I prefer it less than Eiji’s theme from Battle Arena Toshinden 2. There’s a bunch of others that are really good too. >.<
Rungo’s and Ellis’ themes from Battle Arena Toshinden 2.
Lion’s and Jeffery’s themes from Virtua Fighter 2
Several from Marvel vs Capcom and the Guilty Gear series.
Any many more from other games as well.
But I’d have to go with Eiji’s theme from Battle Arena Toshinden 2.
