They use big weapons because the Japs wish they could wield ten-foot katanas and kill people Matrix-style.
Or they just compensate for their lack of genitalia.
Seriously though, that’s just their style. Notice how they like to design anime characters with extra long legs (i.e. Mikami the Ghostbuster, Sailor Moon, etc.) and not to mention those *huge* eyes. (They could probably see in dim light as well as we can see in daylight.) They also like to design airheads with huge breasts bigger than people’s heads. (And I’m not even talking about hentai… yet.)
