But yeah, I totally agree. They’re so useful and with all the hiking you do in FFX it would’ve be awesome and alot less time consuming.
Final Fantasy X-2 had the right idea — having the Celsius basically available all the time serves largely the same function. And, of course, in that game, there was actually a very good and believable explanation for your characters having access to an airship right away.

Meh, honestly I could have done without the gate crystals. They should have just let us use the Strahl earlier! It was annoying that we have a freaking airship pilot as a major character but couldn’t even use the airship for the first 2/3 of the game. In 6, once you get Setzer, you get the Airship! Same in 7 with Cid. That’s how it should be.
They were always having to make up lame plot devices as to why we couldn’t fly, too. "Oh… we can’t use it in that area, that’s Jagd" or, "ah, well, we can’t fly right now Archadia’s airships are on patrol", etc. Then later I guess patrols stop or something so we can fly around?? Yeah, likely…
They ought to have just made the world a bit bigger and let us fly where we liked (not just to anchor spots). It’s sad they dropped the pilot-able airship on the PS2… Gate Crystals were just added as a way to get around the lack of airship. I will admit Gate Crystals would have improved X, BUT I think BOTH X and XII would have done better by simply allowing us to use the airship earlier as in FF4-7.
Anyway:
Harry Potter and the Deadly Hallows, huh? Quite a spooky, ominous-sounding title.
