Like in most games osts, it's pretty obvious to discern whether if the composer is the music has a japanese feel to it. But, in some cases japanese composers who are composing a game with a non-japanese setting decided to stray a bit. For example like hotel dusk or professor layton. So... do u guys notice any other osts or maybe a particular tracks in a game?

I'm not sure what you mean by "Japanese feel." Like, does "Hyrule Castle" (http://www.youtube.com/watch?v=uBhrltLp2dk) have a "Japanese feel"? Does "Onett" (http://www.youtube.com/watch?v=nNGY_fvXUCY)? Does "Metal Man" (http://www.youtube.com/watch?v=si8HiBgcg_U)? This could go on forever.

It might be easier to take a look a look at the Wikipedia page (http://en.wikipedia.org/wiki/Category:Video_games_set_in_Japan) for games that do have a Japanese setting and then just listen to the soundtracks for all other games. :D

all the composers have pretty much made non asian sounding music.

the reason they do this is most likely to do with classical training and a complete adoption of western cultures.

Snake Eater from mgs3 is a good example. As it copies the style of a James Bond film (apparently).
