Yup yup. Another one of these threads. What's the last thing you ate? And if you made it yourself feel free to share the recipe :) I'm really curious as to what kind of meals and snacks our international friends enjoy ^__^


Last thing I ate was some leftover cheese bread from a pizza place and some cottage cheese with a bit of salt and pepper :) Oh ya, and a chocolate marshmallow easter egg candy... my fav <3

Pan seared Tilapia, french cut green beans, cheddar broccoli rice, and banana muffins for desert, and as a snack for over nite. Flash frozen and vacuum sealed fish. The rest was fresh and all homemade. Thawed the fish, and grilled it in an electric skillet with a tad of oil. I get the individually sealed frozen stuff, since it ias just me these days, and the fish doesn't reheat too well.

Preheat oven to 375
Put 4 tilapia filets in a baking dish (I prefer catfish a little more, but only had tilapia in the fridge tonight)
Sprinkle Tony Chachere's on top (1-2 tbsp)
Parmesan cheese on top of that (~2 tbsp)
4 cloves of garlic on top of that
1 can of Rotel tomatoes & green chilies, including half of the juice, over that (plain tomatoes if you don't like it spicy)
Add a few green olives on top of that for a salty hit in each bite (sounds bizarre, works beautifully with the other flavors)
Bake for 20-25 minutes depending on how thick your filets are

On the side I just had angel hair pasta with parmesan and olive oil and garlic. And a spinach salad with ginger dressing. Got lazy.

I would have taken a picture if I'd known this thread existed. I've thought about doing a recipe thread for ages.

I find I watch a lot of the Food Network stuff. I am fond of Iron Chef America, and Chopped. I don't really follow recipies too much, I just muddle through. I have cook books, and peruse them now and then. I used to work as an assistant Head Baker at a restaurant, about ten years ago. I enjoy the work itself, if not that environmend.....

Do we all get "good cook" rep? ;D

...and the most delicious macaroni I've ever had in my life at a local restaurant! I usually have a very difficult time getting through a regular sized bowl there, but I got a large and shoveled right through it! I felt fat, but sooooo delicious! I even wanted more when I was done!

Let's see... it was macaroni, with a cream sauce and shredded cheese (may have been either cheddar jack or monterey jack), I ordered sauteed beef in it too, a lot of finely crumbled bacon bits (almost bacon powder), and sausage chunks. SOOOOO GOOD!!!!!!

Grated a 1/4 block of fresh mozerella cheese. Made a small loaf of italian bread earlier. Now cut it up, and put them on the grill, added garlic salt, and mozerella. Little cheesy baggette slices to go with my lasagna. A little much for just me, but oh well. Still used to cooking for two. :( :(

I made some hummus tonight. ....and feck is it ever good.

it's easy if you have a food processor.

take:

2 cups cooked chick peas
1/3 cup tahini
1/3 cup freshly squeezed lemon juice
1/3 cup the cooking water you used for the chick peas
8 cloves garlic cloves (mince the hell outta them)(really depends on your personal tastes for garlic.)
2 1/2 tsp ground cumin
1 1/2 tsp curry powder
1 tbsp sambal oelek
1/2 tsp salt
1/4 tsp toasted sesame oil
1/2 tsp cayenne
6 drops hot sauce of your choice

mix it all in a food processor until it's the right consistency
then add in:

3 tbsp freshed chopped parsley
2 tbsp extra-virgin olive oil

mix for 30 seconds and it's done. :)

I usually chill it before I actually serve it with crackers or warm pita flatbread.

It's hot but not too hot....unless you're a wuss. :p

Made a homemade crab salad. Shredded imitation crab meat, chopped fresh celery and carrots, bacon bits, miracle whip and ranch dressing, salt and pepper, and 3/4 box of small pasta shells. Chilled that, and will eat it with some nice BLT's, made with texas toast, and good bacon from the butcher. Banana muffins for later. The salad should last a few days.....

Just made myself a breakfast casserole of sorts.

Baked n' diced potatoes in garlic, cumin, curry and all the good stuff.

Then fried up some sausages, bacon, red n' yellow peppers and onions.

Put it all in a casserole dish, poured beaten eggs all over and grated montery jack/jalapeno and cheddar cheese and put it in the oven at 425 for 10 minutes.

After the egg was cooked I threw on fresh diced tomatoes and chives......

...and now....nummers. :)

Last night I tried something new and made ginger-glazed mahi mahi from this recipe (http://allrecipes.com//Recipe/ginger-glazed-mahi-mahi/Detail.aspx). The recipe didn't give any indication of what to accompany it with or what to serve it on, so I sprinkled salt and cracked pepper onto a bed of spinach and put the fillet on top of that. The spinach soaked up the extra glaze and ended up being delicious in its own right.

Mine looked better than the website's picture (a little darker and with more glaze), but here's the idea:

I had HomeMade Oreo's.

Here's the recipe

1 cake mix (chocolate for Oreo taste, but can use any flavor)
3/4 c. shortening
2 eggs

Mix all ingredients, then roll into 1" balls. Flatten balls with the bottom of a glass. Bake 8 min at 350 degrees.

Filling

3 3/4 cups powdered sugar
1/2 tablespoon granulated sugar
1/2 cup shortening
2 tablespoons hot water

They are yummy, and you can double stuff them if you want!

They are really easy to make.
I have a kid and Husband with a chocolate allergy so I make them out of Lemon cake mix for them.

If the cookie dough sticks to the bottom of the glass, dust the glass with flour.

Baked shrimp in a tomato feta sauce

Ingredients

* 1 Tbsp olive oil
* 1 medium onion, chopped
* 2 cloves garlic, minced
* 2 14.5-ounce cans of diced tomatoes (or fresh, obviously)
* 1 Tbsp minced fresh dill or 1 teaspoon dried dill
* 1 to 1 1/4 pounds medium sized raw shrimp, peeled and deveined (can leave tails on), thaw if frozen
* Salt/pepper to taste
* 3 ounces feta cheese (about 2/3 cup, crumbled)

1 Preheat oven to 425�F. Heat oil in a large, oven-proof skillet on medium high heat. Add the onions and cook until softened, 3-5 minutes. Add the garlic and cook until fragrant, about 30 seconds more.

2 Add the tomatoes and bring to a simmer, reduce heat and let simmer for 5-10 minutes, until the juices thicken a bit.

3 Remove from heat. Stir in the herbs, shrimp, feta cheese, and salt and pepper to taste. Place pan in oven and bake, uncovered, until shrimp are cooked through, about 10-12 minutes.

Serve with French bread, pasta, or rice.

Yup. I had a sore throat, then what I thought was just a cold, and then terrible sick and vomiting and pain and it was awful. Just a little bit of sniffles left now. Seems like half the people I talk to, irl and online, have had whatever that was.

Homemade cough Syrup

1/3 cup fresh lemon juice
1/3 cup Honey
1/3 cup Brandy (I prefer rum but my kids prefer brandy)
1/3 cup Camomile tea concentraited
- I boil a tea bag in 1 cup water until there is only about a third of it left
take the tea bag out and mix the honey and lemon in the pan till honey blends with everything
remove from heat and stir in the brandy

allow to cool
take a tablespoon as needed. (and that doesn't mean take it every minute till its gone ;-D)

I used this reciepe on my son who has asthma because I didn't like the cough syrup they gave me to give him. It made him shake like he was on too much caffine. I would give him a tablespoon about every 2 hours.

1 teaspoon of minced garlic
1/2 tbsp of dill weed
1/2 tbsp of cajun
2 or 3 drops of your favorite hot sauce.

Actually me mammy brought over a whole roast for me....and it was glorious.

She brought over some nice Yukon gold potatoes and a bag of really nice hoagie buns to make roast beast sandwiches with for the rest of the week.

It's all gone now. :(

That's neat cuckoo :) Reminds me of many years ago when the ice cream truck came through our neighborhood. We lived in a subdivision where our house was right on the corner so automatically it was the ice cream truck's first stop because my brothers and I were always outside (the Doom obsession had passed), so as soon as he pulled up our dad was already outside with his wallet waiting with us :) Fudgsicles, bompops, those ones with all the one stuff on 'em, we had a huge advantage to pick from a huge selection :D Man, now I miss bein' a kid ; ;
