First thing to do is get yourself a video capture card, you can find lots HERE (http://www.tigerdirect.com/applications/category/category_tlc.asp?CatId=1423&name=Video-Capture).
Next hook up your PSX/PS2 directly to the capture card or you can do what I do and use my VCR as a A/V hub, meaning my PSX/PS2 is connected to the VCR and the VCR is connected to the video capture card.

You will get software with your capture card but it is geared for video/audio recording so I suggest a program like Crystal Audio Recorder (http://www.newfreedownloads.com/MP3-Audio/Rippers-Encoders/Crystal-MP3-Recorder.html) to record what you hear through the capture card. Remember to turn off the sound fx in the game's settings and make sure you turn up the volume levels for the music.
