If you tell him to become a breeder, then you actually can get a prize later. He'll be on-board the S.S. Liki, working as a breeder there. He tells Tidus about how much he's enjoying his job and gives you a Friend Sphere that one of his chocobos found.

Besides, he looks and sounds pretty disappointed if you say "knight". Give the poor guy a break, I always think.
