I'm assuming you mean game music that goes out of its way to emulate music from other cultures? If that's the case, go grab the La-Mulana arranged soundtrack; (http://files.myopera.com/White%20Knell/lamulana_music/index.php) because the game takes place in ancient ruins, each part of which is basically modeled after an ancient culture, the music reflects that.

In particular, I think you would be interested in "Song of Curry," "Primitive Dance" and "Grand History," though really the entire thing is very well done.

Baba Yetu from Civilization IV is definitely an amazing piece of "ethnic music" if that's what you mean by ethnic music.

Try 'Great Wilder' from La Pucelle Tactics. Best piece of "ethnic" music.
