Two of the better Final Boss songs featured on this site are Midnight Carnival from GGXX, and The Unsung War from Ace Combat 5.

But are there any other good ones I should know about? I'll take anything.

Does it?

Does it?

It has "Blue Water, Blue Sky ~May's Theme~", but "Midnight Carnival" isn't on it. However, "Awe of She" is a much better and dominant final battle theme.

Favorite final theme music eh, There's too many for me to discribe all of them on one post but here's some of my personal favorites That I can think of off the top of my head:
Agnus Dei/Megalith battle from Ace combat 4.
Gateway to Destiny/ the undead centurion battle from Eternal darkness,
One winged angel from FFVII (A FF fan favorite)
And for some reason I really liked the theme for Lavos' Final form from Chrono trigger. It is a variable speed techno piece of music that had a somewhat ethereal quality that would entrance you and cause you to become engrossed with the whole fight, well at least it had that effect on me.

World Revolution?

Yeah, that's a damn fine one.

Yeah world Revolution is a good one too but that's the music for lavos' second form. The one I'm thinking about is called "last Battle" and it's where you fight the humanoid alien spellcaster with two lavos bits on each side. The fight is easy to reconise because of the crazy pyscodelic background that transports you to differant points in time as the battle progresses.

The final level to Um-jammer Lammy had some badass music. The Marios and Donkey Kong Country games' final music wasn't bad either if I recall. Final Fantasy IV, VI, and VIII are probably my favs, tho.

Here's some more final music that I like.
"Dragon God" from Chrono Cross
"Death Ballad" from Castlevania SotN (ok so Galamoth isn't the final boss of the game but with how tough he was compared to Dracula he might as well should be)
Delacroix and Arzial's theme from Chaos Legion
Draconis, Irwin and the Mana goddess's theme from Legend of mana
and the final stage music from Axelay though to be honest most of the Axelay music was good.

WARNING - SPOILERS AHEAD

Dancing Mad from FFVI is an all-time favourite of mine (I actually perfer the full 18-minute long OST version to the shorter Black Mages remix though), as it is a technical triumph, considering it was composed using the SNES' primitive sound processor.

Recounting thematically a slow descent into hell, it is essentially four battle themes in one with no break between them - one for each of the Three Goddesses of Balance the party fights in succession (Poltergeist, Doom and Goddess) as well as, finally, the insane clown himself, Kefka.

As a further touch of genius, Uematsu cleverly composed the entire piece so that each tier seamlessly progressed into the next as each boss form was defeated in turn. Plus, as a final coda, he even managed to add in Kefka's famous 16-bit grwaffah cackle.

I'll love this piece forever!

Arrangement wise, overall, GGX: HRT is much better, but sound wise, GGXX is better because it uses the advantage of a full band, whereas GGX: HRT only has a guitarist, Toh-ru Iwao, and, on one or two tracks, a live bass player :)

Final Battle themes. Often, those can make or break a game, leaving a player with either a sense of 'meh', or 'I want some frickin' more!'. But I digress...

"Zero" from Ace Combat Zero
"Sibling Showdown" and Vergil 3rd Battle" from Devil May Cry 3(yeah, I know it's two tracks, but something is lost if you leave out one of them)
"Lucia vs Zophar" from Lunar: EBC
"Go! Go! GO!" from Lunar: SSSC
"Battle #3" from Lufia 2(epic, especially given the time it was composed; you really felt the battle had to be an art form to go with the music)
Dark Force battle from Phantasy Star 3(there wasn't an official name for it, but those who have played the game probably know what I'm talking about)
"Hellfire" from Soul Calibur 2(organ music is one of my weaknesses)
"Battlefield Without Light" from Suikoden 2(Latin chanting in the song's background is another weakness)

A number of others have been mentioned, but I tried to stick to new additions.
