Square has denied that there will be a FFVII Remake, like you said it was a Tech Demo. But Square HAS revealed that a Final Fantasy title is planned for the PS3, more than likely FFXIII.

My thoughts are that seing as they are reinvoking the FFVII Story at least they could do
A re-hash of the current PC version removing the bugs and addressing all the compatibilty issues (transistion to XP ect) and maybe make it installable...

This would accomodate new FFVII players who may play DC,BC ect and want to know the bit in the middle concerning FFVII itself.

If they wanted to be really nice they could replace the old Fmv's with the new tech demo video and make new clips similar to the tech demo, that would bring it in line with AC
This may be achievable as it only took them six weeks to make the tech demo

however to keep costs low it would be expected to be released in some sort of Square Classics range (like the PS platinum range) so it should only cost $30 or so....

I just watched the re-done intro for PS3. I swear, that is not computer graphics.

I noticed with things like Gran Turismo 3, that its almost real, but they havent hit that little thing that makes it look like its real.

In that video, I swore I was watching an actor. That scared me. That was too good. The was Aeris got up...
