well. even the description under that video says that this track has nothing to do with a Full Throttle 2 soundtrack. McConnell was the only composer and the music hasn't leaked to public (as of yet).

When I interviewed Peter back for the 10th Anniversary of Full Throttle he mentioned that music exists but it's in the vault at LucasArts. That was back in 2005 so who knows where it is now after the demise of LucasArts and the Lucasfilm's puchase by Disney.
