Does anyone here know what SeeD stands for, if anything?

As far as I know, it isn't an acronym for anything. It's merely metaphorical.

It's more like. . .they're the seeds of the Garden, so to speak.

Okay. I was thinking it would be something like:
Sorceress elimination and erradication... Something. But evidently it seems it's an acronym.
