Mine are:

1. Diamond Dust Drops

2. Azumanga Daioh

3. Neon Genesis Evangelion/Fullmetal Alchemist

Other good ones are Cowboy Bebop and Gundam SEED

There are lot of good ones, but these comes to my mind at the first place...
