I'm manualy recording the music by pausing the game and choosing the music option, you can get a nice fade in and fade out effect this way. Using ePSXe and FRAPS to record footage from wich I export the sound into Sony Vegas Pro and then from there I render the video and make the mp3. The game has tons of variations so this might take a while for me to do alone.

The boss fight music was extracted directly from the game with CubeMediaPlayer, I tried PSound for the other tracks but it's just the instrumentals used for the songs.
Level 1 - 4 are done. All boss fight music are included already.
