I liked all the boss fights but the few that I remembered well are:

Demon Gate (the wall at the temple of the Ancients). This was quite tough, I remember my older brother died on this so much. As soon as you see his basic attack hurt over 1000 it puts you into shock thinking "oh man this is going to be tough!". But the Demon rush attack or what ever it's called is a real devastator.

Jenova Life. Obviously Aries' death and the music sets the scene but all of Jenova's attack go with the music perfectly.

The 2 headed dragon you encounter when you are climbing the North Crater. This fight is pretty cool and I love the initial attack where he first uses the ice breath then immeadiatly follows with a flame breath which puts you in shock since you have been dealing with ice attacks for a while now. You are now starting to encounter flame based attacks. This boss was also respectfully challenging as well as it had some cool attacks.

Diamond Weapon. This weapon was always my favorite but it was TOO EASY. Surely his shooting attack should hurt at least twice as much, not a puney 700. And his foot stomp should do a lot more damage too. His Diamond beem was cool but it took too long to charge. Love this fight, just wish it was harder.

Lost Number is easy if you stun it with either Aeris's Seal Evil Limit Break or the Choco/Mog summon materia. It can be challenging for the unprepared though.

As for Demon's Wall, I agree that battle is annoying, unless Aeris has her Level 4 Limit Break Great Gospel, which makes the battle an absolute cakewalk.

I'm not really sure what my favourite battle would be though - although I admit I enjoyed the Motorball fight at the end of the Midgar Highway. Equipping the Elemental Materia with Fire materia in one person's armour made it so much easier (as did using Aeris for healing). Reversing everyone's party order beforehand helped too, given the fact the battle is a Rear Attack.

Lost Number was cool. You can attack him with physical attacks you just have to wait and watch when he changes to using magic. The Midgar Zolom wasn't a boss but still really cool, it scared the crap out of me the first time I played the game when I was younger haha. My favorites would have to be Red Dragon, Sephiroth and Schizo (The 2 headed Dragon). Proud Clod was pretty epic too.

Ugh, I hated the Demon wall, only because our old Playstation 1 had some problems with that part of the disk, and so the game would always freeze up when he used some specific attack. I ended up getting really lucky one playthrough and beating him before he could use that attack =P

My favorite boss would probably have to be the very first boss of the entire game, although the fight against Rufus has to take a close second for me. Something about both battles just feels so gritty and realistic; the rest of the boss battles just strike me as too fantastical/unrealistic, but those two struck me as solid, realistic and brutal fights, even though they were both easy.

Yeah. The fight with Rufus was awesome and felt "real" in a way. It was also during a time of "urgency" (in a way), the escape from Midgar was genius and intense

Demon wall was a pretty fun boss, was quite challenging though.

But i think overall i always enjoyed the fight with Hojo the most, i always found it really satisfying beating him down for some reason.

The final fight with Safer sephiroth, and Bizarro sephiroth has to be my favorite, epic music combined with an even more epic setting was perfect to me. Beyond that battle id say the little fight with Rufus was pretty neat. The boss fight with Hojo and the Proud clod were the most sastifying , but the most epic was the Boss Fight with Emerald Weapon, i took it down within 2 hours ( one of my FF crowning achievements ), ruby weapon would have been so, had he not been nearly impossible to defeat.
Beyond the original FF7 - in crisis core my fave was ... of course Genesis, and my crowning achievement in that one was defeating " Minerva " ( 4 hours and 85 phoenix down's later she fell ). Likewise in Dirge of Cerberus, Weiss was an epic boss fight and easily my fav from that game.
Over all my favorite boss fight in FF7 was Safer Sephiroth.

Jenova∙LIFE: It was sad and epic. Everything was synchronized, in my case, that sphere descended at 1:40 (soundtrack).
Ultimate Weapon: A nice looking boss, it was fun to look for it everywhere.
Diamond Weapon: I really liked the idea of protecting Midgar from that thing.
Safer∙Sephiroth: I was shocked by Sephiroth's look, One-Winged Angel, Supernova and that place (Heaven?). By far, the best final boss ever... Sorry Kefka.

Proud Clod battle and Sephiroth limit break battle segment i guess.

I like the design of Proud Clod boss battle. Also i like segmet where you do Omni-slash limit break on Sephiroth himself, though you may not have it.

Emerald and Ruby Weapons battles were fun too, i actually liked to kill Emerald Weapon with physical attacks combined with "Knights Of The Round" summon and healing with Megalixirs.

Hero didn't like the Sephiroth fight simply because it bugged him so much that Sephiroth could summon a supernova that would only affect the party in the battle but he wanted to use Meteo, one of the most common end-game abilities in the final fantasy series, to destroy the entire world... speaking of most common end game abilities why has none of the newer games had meteo..?

Kitty liked the fight between sephiroth and the dragon, even though it's not really a boss fight.
Hero liked fighting Ruby.

I liked the fight with... Heidegger, was it? The rotund gentleman. I can't even remember if you actually fought Heidegger himself or if he simply summoned something to fight on his behalf, but I do remember particularly enjoying this encounter because it seemed like it was going to be a piece of cake. A lot of the boss fights in FFVII were quite easy, but this one might've been the only one that felt downright fixed going in. 'Twas nice to have a light-hearted boss battle for once. Think some sort of shenanigans went on inside of the battle screen, too, which made it stand out even more.

I always thought the mataria keeper was a badass boss fight...and if you're a first timer playing through ths game the materia keeper might be the hardest boss you run into, because most ppl on the first playthrough will put vincent in there party thinking "yaaaay look at this badass guy i just found" an then he gets his limitbreak an you think its so cool untill he starts healing the materia keeper big time with his beast flare thing lol

My favorite boss battle is the one with Reno and Rude, where Reno says something like, "We may have been defeated, but we're still victorious!" when you beat him. Funny stuff, kupo.

Palmer obviously, i hated the fight because he didn't deserve to be called a boss. Then he got hit by a truck, and i giggled for HOURS :D
The Gate Demon/Demon Wall whatever it's called was a fun fight because i found him to be a recurring boss as he was on IV and maybe others but i don't remember.
Best boss fight for me, was that one in Cosmo Canyon, the Gi something, just the way the face shifts before the fight made me crap myself the first time i saw it.

Materia Keeper up on Mt. Nibel is definitely a favourite of mine, as for some reason I always used to struggle against it. So in a masochistic way that's a favourite because it added a bit of difficulty to the game.

To be honest the biggest problem with the game is how stupidly easy most of the boss fights are. They should all be liek demon gate
